COOK: Classic Chocolate Cupcakes

At the moment I'm having this thing with cupcakes. They are just the right amount of cake for me, easy to make and super versatile. Whether you like vanilla and lemon or morish chocolate there is a cupcake for everyone. Today however I'm craving some good old fashioned choccy ones.

Classic Chocolate Cupcakes

Yields ½ dozen

- 150g dark chocolate chips
- 150g unsalted butter
- 3 eggs
- 60g self-raising flour
- 60g castor sugar
- 1 tbsp cocoa powder

1) Pre-heat the oven to 160° C and line your cupcake tin with cupcake liners.

2) Melt the butter and chocolate chips in a stainless steel bowl set over a pot of simmering water. Allow to cool slightly as you prepare the next step.

3) In a bowl whisk the eggs and castor sugar together until the mixture becomes pale and thick.

4) Now fold the flour and cocoa powder into the egg mixture.

5) Slowly pour the chocolate mixture into the egg mixture and stir gently till thoroughly combined.

6) Spoon the mixture into the cups. Place tray in the oven for 20mins. Remove from the oven and allow to stand in the tray for 5mins before removing.

Dust with icing sugar and serve warm.

yum yum yum - these look delicious - if you're a chocoholic like I am, add in one small square of chocolate or a few chocolate buttons into the individual cupcake mixes before baking...happy days
