COOK: Carrot Slaw

I love coleslaw but truthfully I find that the mayonnaise can get a bit much and I sometimes feel really guilty for eating it. Solution? Carrot Slaw...


This recipe is a great substitute for the crunch of coleslaw with out the mayo. Here's what you need to make a serving for two...


Carrot Slaw

- 3 medium sized carrots
- 1 fennel bulb
- 1 small lemon
- 1 tbsp olive oil
- 1 tsp linseeds
- coriander to garnish


1) Start by by peeling the carrots and then use your speed peeler to shave the carrots into ribbons like above.  Using a knife slice the fennel as thinly as possible.

2) Mix the carrots and fennel in a bowl. Drizzle over the olive oil and squeeze over the juice of the lemon. Toss.

3) Sprinkle on the linseeds and a few coriander leaves...yum.


Great as a side dish with a braai but just as yummy on its own. Enjoy...
